Many people think soda sprays because the water inside wants to run out, or because there is too much sugar so it goes crazy. Actually the one that really wants to escape is the carbon dioxide gas. At the factory, soda is pressurized to press lots of carbon dioxide into the water. With the cap on, the pressure inside is high and the carbon dioxide stays obediently in the water. The moment the cap opens, the pressure suddenly drops, and the carbon dioxide, like hearing the end-of-class bell, starts to rush out wildly.

The bubbles in soda come from carbon dioxide. High pressure lets more carbon dioxide dissolve in the water, so the sealed bottle looks calm. At the instant of opening, the pressure inside drops fast. The carbon dioxide that was held down no longer wants to stay in the water, and turns into many small bubbles rising up. As the bubbles rise, they push the soda toward the bottle mouth, so we see foam and liquid spray out. If the soda was shaken, the situation is more dramatic. Shaking beats the air and carbon dioxide into many small bubbles and creates bubble birth points all over the bottle wall. Once the cap opens, these little bubbles immediately grow and multiply, like a bubble army charging the door together, and the spray is fiercer.

想减少汽水喷出来,可以先让瓶子静置一会儿,让小气泡慢慢消失。开瓶时动作要慢一点,让气体一点点跑出来,不要一下子把压力全放掉。
热汽水也更容易喷,因为温度高时,二氧化碳更不愿意待在水里。所以汽水冷一点、静一点、慢慢开,就更安全。
To reduce spraying, let the bottle sit still a while first so the small bubbles slowly disappear. Open it slowly too, letting the gas out bit by bit instead of releasing all the pressure at once. Warm soda also sprays more easily, because at higher temperature carbon dioxide is even less willing to stay in the water. So a soda that is colder, calmer, and opened slowly is safer.
