Introduction
Left on the table, chocolate looks hard; but held in your hand a while, the edges start to soften and even stick to your fingers. In summer, chocolate left in a backpack may have turned into a little chocolate swamp by the time you open it. Why is that?
Common Misconceptions
Many people think chocolate melts because it is too fragile or was damaged by the sun. Actually the chocolate is not spoiled; it is just going through a common state change as the temperature rises: slowly turning from solid to liquid. Others think only very high heat melts chocolate. Actually chocolate is special: the cocoa butter inside starts to soften and melt near body temperature, so the warmth of your palm is enough to make it surrender.
Core Principle
Chocolate contains an important ingredient called cocoa butter. Cocoa butter is like little oil bricks in the chocolate; at low temperature it lines up neatly and keeps the chocolate in a solid shape. As the temperature rises, especially near 30 to 35 degrees Celsius, the cocoa butter begins to soften, and the little oil molecules that stood in line start to move around. Once they move around, the chocolate is no longer hard, but slowly softens, gets sticky, and becomes liquid. Human body temperature is about 37 degrees Celsius, a bit higher than the temperature at which chocolate easily melts. So chocolate melts quickly in the mouth and also melts in the hand.
Real-World Application
Chocolate is best kept in a cool, dry place. In hot weather it can go in the fridge, but sealed well to avoid taking on the fridge's smells and moisture. If chocolate melts and then hardens again, a whitish patch sometimes appears on the surface. That is not necessarily mold; it may be cocoa butter or sugar that moved to the surface and formed a bloom. It may look less pretty, but if there is no off smell and no spoilage, it is usually still fine to eat.
Extended Knowledge
Chocolate melts in the mouth precisely because its melting point is close to body temperature. This trait makes it messy in the hand but gives it a smooth feel in the mouth. Different chocolates melt at different speeds too. Dark, milk, and white chocolates have different ingredient ratios, and the amounts of cocoa butter, sugar, and milk powder all affect how fast they soften.
One-Line Takeaway
Chocolate melts because the cocoa butter inside softens and turns liquid near body temperature; the more heat, the more easily it melts.
